Todd Gray's Watershed is one of many DC restaurants specializing in local seafood and Southern-style cooking. What sets it apart from all the others, however, is what Chef Gray calls his creative "layered flavors" approach to regional cuisine. For example, if you order the country-fried Amish chicken, you'll find it juicy and succulent on the inside, with a crispy golden skin on the outside. The chicken is paired with a couple of contrasting tastes: Brussels sprouts that have been roasted to the point that they're simultaneously sweet and smoky, as well as fingerling potatoes with a honey-dijon butter sauce on top. Other favorites include Carolina-style barbecued shrimp, fried oyster BLT sandwiches, and Eastern Shore crab cakes served with roasted corn succotash.
